Synching it would mean that every time you plug in your iPod iTunes will update it in accordance to what's in your library. Un-synching it means that your iPod library and your iTunes library are separate. It's better because you won't have to keep all that stuff on your hard drive BUT you'll have to import everything manually in the future.
